Ingredients

  • 4 medium zucchinis sliced
  • 2 cups cherry tomatoes halved
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 cup grated mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup olive oil
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • salt and pepper to taste

Instructions

  • Begin by washing and slicing the zucchinis into thin rounds. Halve the cherry tomatoes and chop the onion finely. Mince the garlic cloves to release their vibrant aroma.
  • Heat half of the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  • Add the sliced zucchinis and halved cherry tomatoes to the skillet. Sprinkle the dried basil, oregano, salt, and pepper over the vegetables. Toss everything together and cook for about 5-7 minutes, just until the vegetables begin to soften but still hold their shape.
  • Preheat your oven to 375°F (190°C). Lightly grease a baking dish with the remaining olive oil. Transfer the sautéed vegetables into the dish, spreading them evenly. Sprinkle the grated mozzarella and Parmesan cheese over the top.
  • In a small bowl, mix the breadcrumbs with a drizzle of olive oil to help them crisp up nicely in the oven. Evenly distribute the breadcrumb mixture over the cheese layer.
  • Place the casserole in the preheated oven and bake for 25-30 minutes until the cheese is bubbly and golden brown, and the breadcrumb topping is crispy. Let it cool for a few minutes before serving.
