Ingredients

  • 3/4 cup oat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup coconut sugar or brown sugar
  • 1/2 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 2 eggs at room temperature
  • 2 teaspoons vanilla extract

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) to ensure even baking.
  • Line a muffin tin with parchment paper liners or lightly grease it with coconut oil to prevent sticking.

Mixing Ingredients

  • In a large mixing bowl, whisk together the oat bran, oat flour, baking powder, salt, and coconut sugar.
  • In another bowl, mix the unsweetened almond milk, melted coconut oil, eggs (at room temperature), and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and gently stir until just combined. Avoid overmixing to keep muffins light.

Baking

  • Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full. Fold in any extras like nuts or berries if desired.
  • Bake the muffins in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
