Ingredients

  • 1 pound chicken breast chopped into bite-size pieces (about 2-3 medium chicken breasts)
  • 1 cup broccoli florets fresh or frozen
  • 1 zucchini chopped into cubes
  • 1 cup bell pepper chopped (any colors you like)
  • 0.5 onion chopped
  • 2 cloves garlic minced or crushed
  • 2 tablespoons olive oil heart-healthy fat
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon pepper
  • 1 tablespoon Italian seasoning or your favorite spice blend

Instructions

Step 1: Prep Your Ingredients

  • Rinse the chicken breasts under cold water and pat dry with paper towels. Chop into bite-size pieces. Wash and chop broccoli florets, zucchini cubes, bell pepper strips, and chopped onion. Mince or crush the garlic cloves finely.

Step 2: Season and Toss

  • In a large mixing bowl, combine chicken and chopped vegetables. Drizzle with olive oil, then sprinkle garlic powder, chili powder, salt, pepper, and Italian seasoning. Add minced garlic. Toss until all pieces are evenly coated.

Step 3: Preheat the Air Fryer

  • Set air fryer to 375°F (190°C) and preheat for 3-5 minutes to ensure crispy texture.

Step 4: Cook in Batches (If Needed)

  • Place chicken and veggie mixture evenly in the air fryer basket. Avoid overcrowding. Cook in two batches if basket is small to maintain crispness.

Step 5: Air Fry and Shake

  • Cook for 12-15 minutes, shaking or tossing basket halfway through. Chicken should be golden and cooked through (165°F/74°C). Veggies tender yet crisp.

Step 6: Serve and Enjoy
