Ingredients

  • 1 cup uncooked lentils
  • 1 tablespoon avocado oil
  • 1 red onion chopped
  • 2 carrots chopped
  • 1 bunch broccolini chopped
  • 1 small red bell pepper chopped
  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • sea salt to taste

Instructions

Step 1: Prepare the Lentils

  • Rinse the lentils under cold water. In a medium pot, add the lentils and cover with water. Bring to a boil and then reduce to a simmer. Cook for about 20-25 minutes until the lentils are tender but not mushy. Drain and set aside.

Step 2: Sauté the Vegetables

  • In a large skillet, heat the avocado oil over medium heat. Add the chopped red onion and sauté for about 3-4 minutes until it softens and becomes translucent. Next, add the chopped carrots and red bell pepper. Cook for an additional 5 minutes, stirring occasionally.

Step 3: Cook the Ground Beef

  • Push the vegetables to the side of the skillet and add the ground beef to the center. Use a wooden spoon to break it apart as it cooks. Season with garlic powder and sea salt to taste. Cook until browned and fully cooked through, about 7-10 minutes.

Step 4: Combine Everything

  • Once the beef is cooked, stir in the cooked lentils and chopped broccolini. Mix everything well and cook for an additional 5 minutes, allowing the flavors to meld together. Adjust seasoning if necessary.

Step 5: Serve and Enjoy
