Ingredients

  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Vegetable Ingredients

  • 1 medium zucchini, sliced into 1/3 inch slices
  • 2 medium bell peppers, sliced into 1-inch pieces
  • 1 medium onion, quartered into 1-inch pieces
  • 1 cup cherry tomatoes
  • 1 ear corn on the cob, cut into 1-inch rounds
  • 10 pieces mushrooms, cleaned and whole

Instructions

  • Step 1: In a large mixing bowl, combine the olive oil, garlic powder, oregano, salt, and black pepper. Whisk until well combined.
  • Step 2: Wash and chop the vegetables according to the sizes listed in the ingredient section.
  • Step 3: Add all the chopped vegetables into the bowl with the marinade. Toss until evenly coated. Let marinate for at least 15-30 minutes.
  • Step 4: Soak wooden skewers in water for about 15 minutes. Thread the marinated vegetables onto the skewers, alternating for a colorful presentation.
  • Step 5: Preheat your grill to medium-high heat.
  • Step 6: Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the vegetables are tender and have grill marks.
