GREEN BEANS WITH PARMESAN BREAD CRUMBS

Ingredients

  • 1 lb green beans tips removed
  • Salt to taste
  • 1 tbsp olive oil or butter for greasing
  • Lemon juice to sprinkle over the dish
  • 1 heaping cup day-old bread cubed
  • ½ cup Parmesan cheese shavings
  • ½ cup walnuts or pecans roughly chopped
  • ¼ cup olive oil or melted butter
  • 2 cloves garlic chopped

Instructions

  • Bring a large pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes until bright green and tender-crisp. Drain and plunge into ice water to stop cooking.
  • Preheat oven to 375°F (190°C). In a mixing bowl, combine cubed bread, parmesan cheese, chopped nuts, chopped garlic, and olive oil or melted butter. Mix well to coat.
  • Grease a baking dish with olive oil or butter. Place blanched green beans evenly in the dish. Top with the breadcrumb mixture. Bake for 15-20 minutes until topping is golden and crispy.
  • Remove from oven and sprinkle with fresh lemon juice before serving.
