Ingredients

  • 1 pound boneless, skinless chicken breasts pounded to 1/2-inch thickness
  • 3 tablespoons olive oil adds richness and helps the marinade adhere
  • 3 cloves garlic minced
  • 1 tablespoon balsamic vinegar balances acidity and enhances flavor
  • 1 tablespoon lemon juice adds refreshing zest
  • 1 teaspoon dried oregano classic Greek herb
  • 0.5 teaspoon cumin adds warmth and earthiness
  • 0.5 teaspoon dried basil complements oregano
  • 0.5 teaspoon onion powder enhances savory notes
  • 0.5 teaspoon sugar balances acidity and enhances caramelization
  • 0.5 teaspoon salt essential for flavor enhancement
  • 0.25 teaspoon pepper adds subtle kick
  • 0.25 teaspoon paprika adds smokiness and color

Instructions

Stepwise Method: Greek Marinated Chicken

  • Begin by placing the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound the chicken to about 1/2-inch thickness to ensure even cooking and better marinade absorption.
  • In a mixing bowl, combine olive oil, minced garlic, balsamic vinegar, lemon juice, dried oregano, cumin, dried basil, onion powder, sugar, salt, pepper, and paprika. Whisk together until well blended.
  • Place the pounded chicken breasts into a resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Seal or cover and refrigerate for at least 30 minutes or up to 4 hours.
  • Preheat grill or skillet over medium-high heat. Remove chicken from marinade and let excess drip off. Cook chicken for 6-7 minutes per side until internal temperature reaches 165°F (75°C) and grill marks appear.
  • Let the chicken rest a few minutes before slicing. Serve with Greek salad, rice, or pita wraps and enjoy the burst of Mediterranean flavors.

Notes

  • Marinate chicken for at least 30 minutes, but up to 4 hours or overnight for more flavor.
  • Let chicken come to room temperature before cooking to ensure even cooking.
  • Use a meat thermometer to avoid overcooking; chicken is done at 165°F (75°C).
  • Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
  • For a vegetarian twist, substitute chicken with sliced eggplant or firm tofu marinated in the same mixture.
