Ingredients

  • 4 (6 oz) boneless skinless chicken breast halves
  • 1/3 cup olive oil plus more for brushing the grill
  • 1 tablespoon lemon zest
  • 1/3 cup fresh lemon juice
  • 4 cloves garlic minced (about 1 1/2 tablespoons)
  • 2 teaspoons dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary crushed
  • Salt and freshly ground black pepper to taste
  • Chopped fresh parsley for serving

Instructions

  • In a mixing bowl, whisk together the olive oil, lemon zest, fresh lemon juice, minced garlic, dried oregano, dried basil, dried thyme, crushed rosemary, salt, and pepper.
  • Place the chicken breast halves into the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  • Preheat your grill to medium-high heat. Brush the grill grates with olive oil to prevent sticking.
  • Remove the chicken from the marinade and let excess drip off. Grill chicken for 6-8 minutes on each side until internal temperature reaches 165°F (75°C).
  • Transfer chicken to a serving platter and let rest for a few minutes. Garnish with chopped fresh parsley and serve.
