  • 1 cup yellow split peas rinsed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 4 cups water
  • 1/4 cup olive oil
  • 1 lemon juice juice of 1 lemon
  • salt to taste
  • black pepper to taste
  • chopped onions, capers, and olive oil optional, for garnish

Instructions

Preparation and Cooking

  • Rinse 1 cup of yellow split peas under cold running water to remove any debris.
  • In a large pot, combine the rinsed split peas with 4 cups of water, 1 chopped large onion, and 2 minced garlic cloves.
  • Bring the mixture to a boil over medium-high heat.
  • Reduce heat to low and let it simmer uncovered for about 30-40 minutes, or until the split peas are soft and tender. Stir occasionally to prevent sticking.
  • Remove the pot from heat and blend the mixture using a blender or food processor until smooth and creamy. Blend in batches if necessary.
  • Return the blended fava to the pot and stir in 1/4 cup olive oil, juice of 1 lemon, and season with salt and black pepper to taste. Adjust seasoning as desired.
  • Transfer to a serving dish and garnish with chopped onions, capers, and an additional drizzle of olive oil if desired. Serve warm or at room temperature with pita bread or fresh vegetables.
