This Grasshopper Pie is SO EASY! A no-bake, creamy dessert combining minty chocolate ice cream and a crunchy Oreo crust for an irresistible treat.

Ingredients

  • 24 cookies Oreo Mint variety cookies divided
  • 3 Tbsp. butter melted
  • 3.5 cups chocolate chip-mint ice cream softened
  • 1.5 cups Cool Whip or whipped cream, thawed

Instructions

  • Start by crushing 20 of the Oreo Mint cookies into fine crumbs using a rolling pin or food processor.
  • Combine the crushed cookies with melted butter in a mixing bowl and mix until evenly coated.
  • Press the cookie mixture firmly into the bottom and up the sides of a 9-inch pie plate to form an even crust.
  • Let the chocolate chip-mint ice cream sit at room temperature for 10-15 minutes until softened but not melted.
  • Fold the softened ice cream gently into the thawed Cool Whip until fully combined, keeping the mixture airy.
  • Pour the ice cream mixture into the prepared cookie crust and spread evenly with a spatula.
  • Cover the pie and freeze for at least 4 hours or until firm.
  • Once set, slice and serve. Garnish with extra whipped cream or crushed mint cookies if desired.
