Granola Bites

These Granola Bites are SO EASY! A no-bake, crunchy, chewy, and sweet snack packed with wholesome oats, flaxseed, and nut butter.

Ingredients

  • 1 1/2 cups oats regular or quick oats, 135g
  • 1 cup ground flaxseed 100g
  • 2/3 cup crispy rice cereal like Rice Krispies, 20-25g
  • 1 cup creamy peanut butter or other nut butter or sunflower butter, 240g
  • 1 cup mini chocolate chips, raisins, dried cherries, coconut, chopped nuts or a combination, 170g
  • 1/2 cup honey or agave, 120 ml
  • 2 teaspoons vanilla extract 10 ml

Instructions

Stepwise Method: Granola Bites

  • In a large mixing bowl, combine the oats, ground flaxseed, and crispy rice cereal. Stir them together until well mixed.
  • Add the creamy peanut butter, honey (or agave), and vanilla extract to the bowl. Use a spatula to mix everything together until fully combined. The mixture should be sticky and hold together.
  • Fold in the mini chocolate chips, raisins, dried cherries, coconut, or chopped nuts of your choice. Make sure they are evenly distributed throughout the mixture.
  • With clean hands, take small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter. Alternatively, you can press the mixture into a baking dish lined with parchment paper to create bars.
  • Place the granola bites in the refrigerator for at least 30 minutes to firm up. This step is crucial as it helps the bites hold their shape.
  • Once chilled, your granola bites are ready to be enjoyed! Store any leftovers in an airtight container in the fridge for up to a week.
