Ingredients

  • Mixed Nuts (pecans, almonds, hazelnuts, walnuts, pistachios)
  • Unsweetened Coconut Flakes
  • Pepitas (pumpkin seeds)
  • Sunflower Seeds
  • 1 tbsp Walnut or Melted Coconut Oil warmed slightly until liquid but not hot
  • 2 tbsp Brown Rice Syrup or maple syrup or honey
  • pinch Salt

Instructions

Step 1: Preheat and Prep

  • Preheat your oven to 325°F (165°C). Line your baking sheet with parchment paper to prevent sticking and make cleanup easier.

Step 2: Combine Nuts, Seeds, and Coconut

  • In a large mixing bowl, add your mixed nuts, unsweetened coconut flakes, pepitas, and sunflower seeds. Use your hands or a spoon to mix them evenly.

Step 3: Add Oil and Sweetener

  • Warm the walnut or melted coconut oil slightly until liquid but not hot. Stir in the brown rice syrup (or your chosen alternative like maple syrup or honey) and a pinch of salt. Pour this mixture over the nuts and seeds, then toss until everything is well coated.

Step 4: Spread and Bake

  • Transfer the coated mixture onto your prepared baking sheet. Spread it out evenly in a single layer to ensure uniform baking and crispiness.

Step 5: Bake and Stir

  • Bake for about 20-25 minutes, stirring halfway through to promote even toasting. Keep an eye on it in the last 5 minutes to avoid burning, especially around the edges.

Step 6: Cool and Store

  • Remove the granola from the oven and let it cool completely on the baking sheet. It will crisp up as it cools. Once cooled, break into clusters and store in an airtight container.

Notes
