Ingredients

  • 2 cups gluten-free all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon xanthan gum
  • 1 teaspoon ground cardamom
  • 1 lemon zest zest of one lemon
  • 1 teaspoon pure vanilla extract or vanilla bean paste, or one vanilla pod scraped
  • 1 3/4 cups buttermilk (or milk with 1 1/2 tablespoons white vinegar stirred in and left to sit for 5-10 minutes)
  • 4 tablespoons butter melted and let cool for a few minutes
  • 3 large eggs yolks and whites separated
  • butter or oil for frying

Instructions

Prepare the Batter

  • In a large mixing bowl, combine the gluten-free all-purpose flour, granulated sugar, baking soda, baking powder, xanthan gum, ground cardamom, and lemon zest. Whisk these dry ingredients together until well blended.

Mix the Wet Ingredients

  • In another bowl, whisk together the buttermilk, melted butter, and vanilla extract. In a separate bowl, beat the egg yolks until they are light and frothy, then add them to the wet mixture. Stir until combined.

Combine Wet and Dry Ingredients

  • Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix.

Whip the Egg Whites

  • In a clean bowl, beat the egg whites until soft peaks form. Gently fold the egg whites into the batter. This step is crucial for achieving that airy texture.

Cook the Aebleskiver

  • Heat your Aebleskiver pan over medium heat and add a small amount of butter or oil into each well. Ensure it coats the bottom well to prevent sticking.
  • Once the oil is hot, use a small ladle or spoon to fill each well of the Aebleskiver pan about 2/3 full with batter.
  • Allow the Aebleskiver to cook for about 2-3 minutes or until you see bubbles forming on the surface. Using a skewer or fork, carefully flip each Aebleskiver over to cook the other side for another 2-3 minutes until golden brown.
  • As soon as they are done, remove the Aebleskiver from the pan and serve them warm with your favorite toppings like maple syrup, fresh fruit, or whipped cream.
