Instructions
Prepare the Batter
In a large mixing bowl, combine the gluten-free all-purpose flour, granulated sugar, baking soda, baking powder, xanthan gum, ground cardamom, and lemon zest. Whisk these dry ingredients together until well blended.
Mix the Wet Ingredients
In another bowl, whisk together the buttermilk, melted butter, and vanilla extract. In a separate bowl, beat the egg yolks until they are light and frothy, then add them to the wet mixture. Stir until combined.
Combine Wet and Dry Ingredients
Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix.
Whip the Egg Whites
In a clean bowl, beat the egg whites until soft peaks form. Gently fold the egg whites into the batter. This step is crucial for achieving that airy texture.
Cook the Aebleskiver
Heat your Aebleskiver pan over medium heat and add a small amount of butter or oil into each well. Ensure it coats the bottom well to prevent sticking.
Once the oil is hot, use a small ladle or spoon to fill each well of the Aebleskiver pan about 2/3 full with batter.
Allow the Aebleskiver to cook for about 2-3 minutes or until you see bubbles forming on the surface. Using a skewer or fork, carefully flip each Aebleskiver over to cook the other side for another 2-3 minutes until golden brown.
As soon as they are done, remove the Aebleskiver from the pan and serve them warm with your favorite toppings like maple syrup, fresh fruit, or whipped cream.
