Ingredients

  • 4 large tomatoes sliced
  • 3 cloves garlic minced
  • 1 cup Parmesan cheese grated
  • 1 cup mozzarella cheese shredded
  • 1/2 cup breadcrumbs
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • fresh basil leaves for garnish

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a medium-sized baking dish with olive oil.
  • Wash and slice large tomatoes into approximately 1/4-inch thick slices. Lay them on paper towels to absorb excess moisture.
  • In a small bowl, combine breadcrumbs, grated Parmesan cheese, minced garlic, dried oregano, salt, and pepper. Drizzle olive oil over and stir until coated.
  • Layer half of the tomato slices evenly in the baking dish. Season with salt and pepper. Sprinkle half of the shredded mozzarella over the tomatoes.
  • Add the remaining tomato slices on top, then layer the remaining mozzarella cheese.
  • Evenly spread the breadcrumb and Parmesan mixture over the cheese layer.
  • Bake in the preheated oven for 25-30 minutes, until the top is golden brown and cheese is bubbling. Tomatoes should be tender but not mushy.
  • Remove from oven and let sit for 5 minutes. Garnish with fresh basil leaves and serve.
