Ingredients

For the Fries:

  • 6 russet potatoes cut into 1/4-inch-thick matchsticks
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons all-purpose flour or gluten-free flour
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper use to taste
  • Kosher salt and black pepper to taste
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons chopped parsley or oregano

For the Caesar Dressing:

  • 1/2 cup mayonnaise
  • 2 teaspoons lemon juice
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1-2 cloves garlic grated
  • 1/4 cup grated parmesan cheese

Instructions

Prep the Potatoes

  • Preheat your oven to 425°F (220°C). Wash and peel the russet potatoes. Cut them into 1/4-inch-thick matchsticks, ensuring uniform size for even cooking.

Season the Fries

  • In a large bowl, toss the cut potatoes with extra virgin olive oil, all-purpose flour, garlic powder, paprika, cayenne pepper, kosher salt, and black pepper. Ensure each fry is well-coated with the mixture.

Bake the Fries

  • Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until golden and crispy. Watch closely to avoid burning.

Prepare the Caesar Dressing

  • While the fries bake, combine mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, grated garlic, and grated parmesan cheese in a medium bowl. Whisk until smooth and creamy. Adjust seasoning with salt and pepper to taste.

Finish the Fries

  • Remove fries from the oven and immediately sprinkle with grated parmesan cheese and chopped parsley or oregano. Toss gently to combine, allowing the heat to slightly melt the cheese.

Serve

  • Serve the Garlic Parmesan French Fries warm, drizzled with the creamy Caesar dressing or with the dressing on the side for dipping. Enjoy!

Notes

  • Use gluten-free flour to make this recipe gluten-free.
  • Substitute mayonnaise with vegan mayo and parmesan with nutritional yeast for a vegan version.
  • Do not overcrowd the baking sheet to ensure fries get crispy instead of steaming.
  • For extra flavor, try adding herbs like rosemary or thyme or sprinkle chili powder.
  • Store cooked fries in an airtight container in the fridge up to 3 days; reheat in oven or air fryer for crispiness.
