Ingredients

  • 3/4 cup whole milk warmed to 110-115 degrees F
  • 1/2 cup water warmed to 100-115 degrees F
  • 1/4 cup unsalted butter melted and cooled
  • 2 tablespoons honey
  • 1 packet active dry yeast 0.25 ounces or 2-1/4 teaspoons
  • 2 large eggs room temperature and whisked
  • 2 cloves garlic finely minced
  • 2 tablespoons fresh rosemary finely minced
  • 1 teaspoon kosher salt
  • 3-1/2 cups bread flour may need up to 1/2 cup more flour
  • 3 tablespoons butter melted (for brushing)
  • 2 teaspoons fresh rosemary minced (for topping)
  • 1 teaspoon granulated garlic
  • 2 teaspoons kosher salt for topping

Instructions

Activate the Yeast

  • In a small bowl, combine the warm water and honey. Sprinkle the yeast over the top and let it sit for about 5-10 minutes, until it becomes frothy.

Combine Wet Ingredients

  • In a large mixing bowl, whisk together the warmed milk, melted butter, and whisked eggs until well combined. Add in the frothy yeast mixture and stir gently to combine.

Add Garlic and Herbs

  • Stir in the finely minced garlic and fresh rosemary, along with the kosher salt, ensuring an even distribution of flavors throughout the dough.

Mix in the Flour

  • Gradually add the bread flour, 1 cup at a time, mixing with a spatula or using a stand mixer on low speed. Continue to mix until a soft dough begins to form. If the dough is sticky, add more flour, a little at a time, until it pulls away from the sides of the bowl.

Knead the Dough

  • Transfer the dough to a lightly floured surface and knead for about 8-10 minutes, or until the dough is smooth and elastic. You can also use a stand mixer with a dough hook for this step.

First Rise

  • Place the kneaded dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.

Shape the Rolls

  • Once the dough has risen, punch it down to release the air. Divide the dough into 12 equal pieces and shape them into balls. Place the rolls on a greased baking sheet, ensuring they are spaced evenly apart.

Second Rise

  • Cover the shaped rolls with a kitchen towel and let them rise for another 30-45 minutes, or until they have puffed up.

Preheat the Oven

  • While the rolls are rising, preheat your oven to 350 degrees F (175 degrees C).

Prepare for Baking

  • Just before baking, brush the tops of the rolls with melted butter. In a small bowl, mix together the minced fresh rosemary, granulated garlic, and kosher salt. Sprinkle this mixture generously over the rolls.

Bake

  • Bake the rolls in the preheated oven for 20-25 minutes, or until they are golden brown and sound hollow when tapped on the bottom.

Cool and Serve
