Ingredients

  • 1 pound sirloin steak cut into bite-sized pieces
  • 1 pound fingerling potatoes halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme

Instructions

Prepare the Fingerling Potatoes

  • Preheat your oven to 425°F (220°C). Wash and halve the fingerling potatoes.
  • In a mixing bowl, toss the potatoes with 2 tablespoons of olive oil, dried thyme, salt, and pepper until evenly coated.
  • Spread the potatoes out on a baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through, until tender and crispy.

Cut and Season the Sirloin Steak

  • Pat the sirloin steak dry with paper towels and cut into bite-sized cubes.
  • Season the steak generously with salt and pepper.

Sear the Steak Bites

  • Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil.
  • Add the steak bites in a single layer without overcrowding the pan.
  • Sear the steak for about 2-3 minutes on each side until a golden crust forms and cooked to preferred doneness.
  • Remove the steak from the skillet and set aside, keeping warm.

Make the Garlic Butter Sauce

  • Reduce heat to medium and add the unsalted butter to the same skillet.
  • Once melted, add the minced garlic and sauté for about 30 seconds until fragrant, avoiding burning.
  • Return the steak bites to the skillet and toss to coat evenly with the garlic butter sauce.

Garnish and Serve

  • Transfer the steak bites to a serving dish alongside the roasted fingerling potatoes.
  • Sprinkle fresh chopped parsley over the top and serve immediately for best flavor and texture.
