In a mixing bowl, combine your Greek yogurt dough ingredients. Mix until it forms a soft, cohesive dough. If it’s too sticky, add a little bit of flour until it reaches the desired consistency.
On a floured surface, take the dough and roll it out into a rectangle, about 1/2-inch thick. Make sure it’s even to ensure uniform baking.
Using a sharp knife or pizza cutter, slice the rolled-out dough into strips, about 1 inch wide. They can be as long as you prefer, but typically 6 to 8 inches works best.
In a small saucepan, melt the butter over low heat. Add the minced garlic and Italian seasoning, stirring until fragrant. This will be brushed over the dough.
Place the cut breadsticks on a baking sheet lined with parchment paper. Use a pastry brush to generously coat the tops with the garlic butter mixture.
Sprinkle the shredded cheese over the breadsticks, making sure each piece gets a nice cheesy topping.
