Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1 teaspoon ground nutmeg
  • 2 eggs
  • 1 cup heavy whipping cream
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 4 tablespoons salted butter melted
  • 2 tablespoons vegetable or canola oil
  • Powdered sugar for dusting

Instructions

Prepare the Batter

  • In a large mixing bowl, combine the all-purpose flour, salt, baking powder, sugar, and ground nutmeg. Whisk these dry ingredients together until well-blended.

Mix the Wet Ingredients

  • In another bowl, beat the eggs, then add the heavy whipping cream, whole milk, vanilla extract, and melted butter. Mix until smooth and creamy.

Combine Wet and Dry Ingredients

  • Pour the wet mixture into the dry ingredients. Gently stir until just combined. Be careful not to overmix; it’s okay if a few lumps remain.

Heat the Oil

  • In a deep frying pan or fryer, heat the vegetable oil over medium-high heat. You’ll know it’s ready when a drop of batter sizzles upon contact.

Fry the Bites

  • Using a piping bag or a squeeze bottle, carefully squeeze the batter into the hot oil in a spiral or lattice pattern. Fry for about 2-3 minutes on each side, or until golden brown.

Drain and Dust

  • Once cooked, use a slotted spoon to remove the bites from the oil and place them on a paper towel to drain excess oil. While they’re still warm, dust generously with powdered sugar.

Serve and Enjoy

  • Serve your Funnel Cake Bites warm, and watch them disappear as everyone reaches for more!

Equipment

  • Mixing Bowls
  • Whisk
  • Frying pan or deep fryer
  • Slotted Spoon
  • Paper Towels

Notes

  • Fry bites in batches to avoid overcrowding and ensure even cooking.
  • Reheat leftover bites in a toaster oven to keep them crispy.
  • Add chocolate chips or drizzle with caramel sauce for fun variations.
  • Use a good test to check oil temperature: a drop of batter should sizzle and rise.
  • Store leftovers in an airtight container at room temperature for up to two days or freeze for up to a month.
