Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond milk
  • 1/2 cup unsweetened applesauce
  • 1/4 cup fig jam
  • 1/4 cup chopped walnuts
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup dried figs chopped (optional)

Instructions

  • Line an 8x8 inch baking dish with parchment paper, allowing some overhang on the sides for easy removal of the bars.
  • In a medium bowl, whisk together almond milk, unsweetened applesauce, honey or maple syrup, vanilla extract, and fig jam until smooth and well combined.
  • Add rolled oats, chopped walnuts, salt, cinnamon, and dried figs (if using) to the wet mixture. Stir until the oats and nuts are evenly coated and the mixture is sticky.
  • Pour the mixture into the prepared baking dish and press firmly and evenly using a spatula or your hands to pack tightly.
  • Cover the baking dish with plastic wrap or a lid and refrigerate overnight or for at least 6 hours to allow the bars to set.
  • Lift the set mixture out of the pan using the parchment overhang and cut into bars of desired size. Serve immediately or store for later.
