Ingredients

  • 4 pieces flour tortillas
  • 1 cup brie cheese sliced
  • 0.5 cup fig jam
  • 1 cup fresh peaches thinly sliced
  • 0.5 cup shredded turkey bacon
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions

Step 1: Prepare the Ingredients

  • Thinly slice the fresh peaches and brie cheese. Shred the pre-cooked turkey bacon into bite-sized pieces, or cook your own turkey bacon until crispy and shred once cooled.

Step 2: Assemble the Quesadillas

  • Lay out two flour tortillas on a clean surface. Spread about 2 tablespoons of fig jam evenly over each tortilla, leaving a small border around the edges. Layer the sliced brie cheese over the jam, then the fresh peach slices and shredded turkey bacon. Sprinkle with salt and freshly ground black pepper. Top each with another tortilla to form a sandwich.

Step 3: Cook the Quesadillas

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Carefully place one quesadilla in the skillet. Cook for about 3-4 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with the second quesadilla, adding more olive oil if needed.

Step 4: Serve and Enjoy

  • Transfer the cooked quesadillas to a cutting board and let rest for a minute. Cut each into four wedges and serve immediately for a warm, melty, and flavorful experience.
