1cupbrie cheesesliced
0.5cupfig jam
1cupfresh peachesthinly sliced
0.5cupshredded turkey bacon
2tablespoonsolive oil
salt and pepperto taste
Instructions
Step 1: Prepare the Ingredients
Thinly slice the fresh peaches and brie cheese. Shred the pre-cooked turkey bacon into bite-sized pieces, or cook your own turkey bacon until crispy and shred once cooled.
Step 2: Assemble the Quesadillas
Lay out two flour tortillas on a clean surface. Spread about 2 tablespoons of fig jam evenly over each tortilla, leaving a small border around the edges. Layer the sliced brie cheese over the jam, then the fresh peach slices and shredded turkey bacon. Sprinkle with salt and freshly ground black pepper. Top each with another tortilla to form a sandwich.
Step 3: Cook the Quesadillas
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Carefully place one quesadilla in the skillet. Cook for about 3-4 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with the second quesadilla, adding more olive oil if needed.
Step 4: Serve and Enjoy
Transfer the cooked quesadillas to a cutting board and let rest for a minute. Cut each into four wedges and serve immediately for a warm, melty, and flavorful experience.

Notes
Use ripe but firm peaches for the best texture and avoid mushiness.
Remove brie rind if preferred, but leaving it enhances flavor and creaminess.
Cook turkey bacon until very crispy to balance the soft cheese and fruit textures.
Don’t overload quesadillas to prevent them from falling apart during cooking.
Reheat leftovers in a skillet to maintain crispiness rather than microwaving.
