Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 bell pepper sliced (use any color you prefer—red, yellow, green, or orange)
  • 1 onion sliced (yellow or red onion works great)
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning (store-bought or homemade blend of chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper)

Instructions

  • Start by slicing your bell pepper and onion into thin strips for even and quick cooking inside the foil packets. Cut the chicken breasts into thin strips or bite-sized pieces to ensure they cook through without drying out.
  • Place the chicken and sliced vegetables in a large mixing bowl. Drizzle the olive oil over the top, followed by the fajita seasoning, salt, and pepper. Toss everything well until evenly coated.
  • Tear off two large sheets of heavy-duty aluminum foil, one for each chicken breast and veggies. Divide the chicken and vegetable mixture evenly between the two foil sheets, keeping everything centered to avoid leaks.
  • Fold the foil over the chicken and vegetables, sealing the edges tightly by folding twice to create a packet that locks in steam and moisture.
  • Cook the foil packets either in the oven at 400°F (200°C) on a baking sheet for 25-30 minutes, or on a preheated medium-high grill for 20-25 minutes, flipping once halfway through.
  • Carefully open the foil packets, transfer the chicken and vegetables to plates or serve in the packets. Garnish with chopped fresh cilantro and a squeeze of lime juice. Serve with lime wedges on the side.
