Start by cutting the avocado in half, removing the pit, and scooping the flesh into a mixing bowl. Add the lime juice, minced chives, kosher salt, and black pepper. Mash the ingredients together with a fork until combined but still a bit chunky. Set aside.
Using a round cookie cutter or a sharp knife, cut a hole in the center of each slice of artisan bread. The hole should be big enough to hold an egg but not so large that the bread can’t support it.
Heat the skillet over medium heat and add the unsalted butter. Once the butter is melted and bubbling, place the slices of bread in the skillet. Toast for about 2-3 minutes until golden brown.
Carefully crack an egg into each hole in the bread. Season with a pinch of salt and black pepper. Cover the skillet with a lid and cook for about 4-5 minutes, or until the egg whites are set but the yolk is still runny.
Once the eggs are cooked to your liking, remove the toast from the skillet. Spread the avocado mixture generously over each slice.
Garnish with extra chives, a sprinkle of salt, and freshly ground black pepper if desired. Serve immediately and enjoy the explosion of flavors in every bite!
