Ingredients

  • 1 medium ripe avocado
  • 2 tablespoons lime juice fresh
  • 1 to 2 tablespoons fresh chives finely minced
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 slices artisan-style bread thick variety
  • 2 tablespoons unsalted butter for cooking
  • 2 large eggs fresh
  • salt and freshly ground black pepper to taste, for seasoning the eggs

Instructions

  • Start by cutting the avocado in half, removing the pit, and scooping the flesh into a mixing bowl. Add the lime juice, minced chives, kosher salt, and black pepper. Mash the ingredients together with a fork until combined but still a bit chunky. Set aside.
  • Using a round cookie cutter or a sharp knife, cut a hole in the center of each slice of artisan bread. The hole should be big enough to hold an egg but not so large that the bread can’t support it.
  • Heat the skillet over medium heat and add the unsalted butter. Once the butter is melted and bubbling, place the slices of bread in the skillet. Toast for about 2-3 minutes until golden brown.
  • Carefully crack an egg into each hole in the bread. Season with a pinch of salt and black pepper. Cover the skillet with a lid and cook for about 4-5 minutes, or until the egg whites are set but the yolk is still runny.
  • Once the eggs are cooked to your liking, remove the toast from the skillet. Spread the avocado mixture generously over each slice.
  • Garnish with extra chives, a sprinkle of salt, and freshly ground black pepper if desired. Serve immediately and enjoy the explosion of flavors in every bite!
