  • 1/2 cup strongly brewed coffee

Instructions

  • Begin by brewing a strong cup of coffee. Allow it to cool slightly before you use it to soak the cookies.
  • In a large mixing bowl, combine the mascarpone cheese and granulated sugar. Using an electric mixer, beat the mixture on medium speed until it’s smooth and creamy.
  • Slowly pour in the 2% milk while continuing to mix. Beat until the mixture is well combined and has a velvety texture.
  • Take the Nabisco Nilla Wafers and briefly dip each one in the cooled coffee, ensuring they soak up the flavor but don’t become soggy.
  • In your small cups or dessert glasses, place a layer of the coffee-soaked Nilla Wafers at the bottom. Follow with a layer of the mascarpone mixture. Repeat the layers until the cups are filled, finishing with a layer of the mascarpone.
  • Cover the cups with plastic wrap and refrigerate for at least 4 hours, or overnight if you have the time. This allows the flavors to meld beautifully.
