Ingredients

  • 2 1/2 tablespoons Coconut Oil virgin, for best flavor
  • 1 1/2 cups Rolled Oats old-fashioned
  • 3 tablespoons Honey or maple syrup for vegan alternative
  • 1/8 teaspoon Salt a pinch
  • 1/3 cup Chopped Pecans or other nuts like almonds or walnuts
  • 3 tablespoons Finely Shredded Coconut optional

Instructions

  • In a large skillet, melt 2 ½ tablespoons of coconut oil over medium heat until fully liquefied.
  • Add 1 ½ cups of rolled oats to the skillet and stir well to coat with the melted coconut oil.
  • Add 3 tablespoons of honey and 1/8 teaspoon of salt to the oat mixture and stir continuously for 2-3 minutes until fragrant.
  • Add 1/3 cup chopped pecans (or preferred nuts) to the skillet and cook for an additional 4-5 minutes, stirring occasionally.
  • If using, add 3 tablespoons of finely shredded coconut, stir to combine, and toast for another 2 minutes until golden brown and crispy.
  • Remove the skillet from heat and allow the granola to cool completely before transferring to an airtight container for storage.
