  • 1 tablespoon olive oil
  • 1 yellow onion chopped
  • 3 cloves garlic minced
  • 30 oz pinto beans rinsed and drained
  • 1 cup vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • Kosher salt and black pepper to taste
  • Fresh lime juice and cilantro optional for garnish

Instructions

Method: Easy Refried Beans

  • In a large skillet, heat the olive oil over medium heat. Add the chopped yellow onion and sauté for about 5 minutes, or until the onion becomes translucent. Then, add the minced garlic and sauté for an additional minute until fragrant.
  • Add the rinsed and drained pinto beans to the skillet. Pour in the vegetable broth and stir in the ground cumin, chili powder, and dried oregano. Mix everything together well.
  • Allow the mixture to simmer for about 10 minutes. This helps the flavors meld together beautifully. If the mixture appears too dry, you can add a bit more broth.
  • Using a wooden spoon, begin to mash the beans to your desired consistency. For smooth refried beans, continue mashing until creamy. If you prefer a chunkier texture, mash less.
  • Once you’ve achieved your desired consistency, taste the beans and season with kosher salt and black pepper as needed. If you like, squeeze in some fresh lime juice for an extra zing!
