Ingredients

  • 3 pounds ground beef or substitute with ground turkey or ground chicken for a lighter option
  • 2 large eggs
  • 1 cup bread crumbs or cracker crumbs for a unique crunch
  • 2 tablespoons Worcestershire sauce or coconut aminos for a gluten-free version
  • 1/3 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon Stone House Seasoning a blend of salt, pepper, and garlic powder
  • BBQ sauce choose your favorite store-bought or homemade variety
  • 1/2 medium onion diced and cooked until tender
  • 1/2 medium green pepper diced and cooked until tender

Instructions

  • Preheat your oven to 375°F (190°C) to ensure even cooking and a delicious crust.
  • In a skillet over medium heat, add a drizzle of oil and sauté the diced onion and green pepper until tender. Set aside to cool slightly.
  • In a large mixing bowl, combine the ground beef, eggs, bread crumbs, Worcestershire sauce, ketchup, brown sugar, Stone House seasoning, and the sautéed onion and green pepper. Mix until just combined.
  • Grease your muffin tin with cooking spray or olive oil to ensure easy removal of the muffins after baking.
  • Spoon the meat mixture into each muffin cup, filling them about ¾ full to allow space for rising.
  • Top each muffin with a dollop of BBQ sauce for a sweet and tangy flavor.
  • Bake in the preheated oven for 20-25 minutes, until the internal temperature reaches 160°F (71°C) for beef or 165°F (74°C) for turkey or chicken.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack. Serve warm and enjoy!
