Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1/2 medium yellow onion chopped
  • 3 cloves garlic finely minced
  • 28 oz crushed tomatoes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper freshly ground
  • 1 tablespoon fresh basil or parsley finely minced

Instructions

  • In a large saucepan, heat the 2 tablespoons of extra virgin olive oil over medium heat. Allow it to warm up for about a minute until it shimmers.
  • Add the chopped onion to the pan and sauté for about 5 minutes, or until the onion becomes translucent and fragrant.
  • Stir in the minced garlic and cook for an additional 1-2 minutes. Be careful not to let it burn; you want it to be fragrant, not bitter!
  • Pour in the 28 ounces of crushed tomatoes. Then, add the dried oregano, sea salt, and freshly ground black pepper. Stir to combine all the ingredients.
  • Bring the sauce to a gentle simmer. Reduce the heat to low and let it cook uncovered for 20-30 minutes, stirring occasionally. This allows the flavors to meld beautifully.
  • Once the sauce has thickened to your liking, stir in the minced fresh basil or parsley. This adds a burst of freshness right before serving.
