Preheat and oil the grill to high heat, then reduce to medium-high when ready to cook.
Chop the chives and parsley and prepare desired toppings such as sliced tomato, red onion, lettuce, avocado, and buns.
In a medium-large mixing bowl combine ground turkey, chopped chives, chopped parsley, minced garlic, lemon juice, breadcrumbs, mayonnaise, and salt and pepper.
Gently mix with your hands until just combined, being careful not to overwork the meat so the patties remain tender.
Form the mixture into patties—this recipe makes about six small/medium patties or four larger ones—and place them on wax paper or a plate. Press a slight depression with your thumb into the center of each patty to help them cook evenly.
Turn the grill to medium-high and cook the patties until the internal temperature reaches at least 165°F, about 4–6 minutes per side depending on thickness.
Optional: butter the buns and toast them on the grill for 20–30 seconds per side.
Assemble the burgers with your chosen toppings and enjoy.
