Ingredients

  • 2 cups sliced peaches (fresh or frozen)
  • 1 cup rolled oats
  • 1 cup almond flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup coconut oil (melted)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts or pecans

Instructions

Prepare the Peach Filling

  • Start by slicing your peaches if they aren’t pre-sliced. Use fresh peaches for vibrant flavor or frozen peaches thawed and drained to avoid sogginess.

Mix the Dry Ingredients

  • In a large bowl, combine the rolled oats, almond flour, brown sugar, cinnamon, nutmeg, and salt. Stir until evenly mixed.

Add Wet Ingredients and Nuts

  • Pour melted coconut oil and vanilla extract into the dry mixture. Stir well until crumbly, then fold in chopped walnuts or pecans.

Assemble the Pucks

  • Line a baking sheet with parchment paper. Press about 2 tablespoons of the oat mixture into small discs. Top each with a spoonful of peach slices and sprinkle more oat mixture over the peaches.

Freeze the Pucks

  • Freeze the baking sheet with pucks for at least 2 hours until solid. Transfer frozen pucks to a freezer-safe container or bag.

Bake and Enjoy

  • Preheat oven to 350°F (175°C). Arrange frozen pucks on parchment-lined baking sheet and bake for 15-18 minutes until golden and bubbly. Let cool slightly before serving.

Equipment

  • Large Bowl
  • Baking Sheet
  • Parchment Paper

Notes

  • Use ripe but firm peaches to ensure the best texture and avoid mushy pucks.
  • Drain frozen peaches thoroughly to prevent excess moisture and sogginess.
  • You can substitute coconut oil with melted butter for a richer flavor if not dairy-free.
  • Freeze pucks thoroughly before storage to keep them from sticking together.
  • Serve baked pucks with yogurt or honey for extra sweetness and flavor.
