Ingredients

  • 32 ounces frozen corn
  • 4 cans whole corn drained
  • 0.5 cup half and half
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoon fresh ground black pepper
  • 8 tablespoons unsalted butter 1 stick, cubed
  • 8 ounces cream cheese cubed

Instructions

Method: Easy Creamed Corn (Two Ways!)

  • Prepare your corn by measuring out 32 ounces if using frozen, or drain 4 cans of whole corn.
  • In a large pot over medium heat, combine the corn, half and half, sugar, salt, and pepper. Stir well to combine.
  • Add the cubed unsalted butter to the pot. Allow it to melt, stirring occasionally.
  • Add the cubed cream cheese once the butter has melted. Stir until fully melted and incorporated, creating a creamy consistency.
  • Reduce heat to low and let the creamed corn simmer for about 5-10 minutes, stirring occasionally to meld flavors.
  • Taste and adjust seasoning as needed, adding more salt or sugar to preference.

Equipment

  • Large Pot
  • Wooden Spoon
  • Measuring Cups and Spoons
  • Knife and cutting board

Notes

  • Use fresh corn instead of frozen or canned for a sweeter, fresher flavor.
  • Try adding herbs like thyme or parsley for a fresh twist.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently adding a splash of half and half if needed.
