Ingredients

  • 1 tablespoon olive oil for cooking the chicken and adding a light flavor
  • 3 packages ramen noodles 3.5 ounce/100g each; discard the flavor packets
  • 3 chicken breasts cut into bite-size pieces
  • 1 large carrot grated
  • 1 tablespoon fresh basil chopped
  • 1 tablespoon fresh cilantro chopped
  • 1/4 cup chopped peanuts
  • 3 tablespoons peanut butter heaping
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sriracha sauce or more to taste
  • 1/2 lime juice of
  • 1 clove garlic minced

Instructions

  • Begin by bringing a pot of water to a boil. Add the ramen noodles and cook according to package instructions, usually about 3-4 minutes. Once cooked, drain and set aside. Remember to discard the flavor packets!
  • In a large skillet or wok, heat the olive oil over medium-high heat. Add the bite-sized chicken pieces and cook for about 5-7 minutes, or until they are nicely browned and cooked through. Stir occasionally to ensure even cooking.
  • Once the chicken is cooked, add the minced garlic and grated carrot to the skillet. Stir-fry for an additional 2 minutes, allowing the garlic to become fragrant and the carrot to soften slightly.
  • In a small bowl, combine the peanut butter, soy sauce, hoisin sauce, sriracha sauce, and lime juice. Mix until smooth. Pour this sauce over the chicken and carrot mixture, stirring well to coat everything evenly.
  • Add the cooked ramen noodles to the skillet, tossing everything together so the noodles are well coated in the peanut sauce. Cook for another 2-3 minutes, allowing the flavors to meld together.
  • Remove the skillet from heat and stir in the chopped fresh basil and cilantro. Top with chopped peanuts for an added crunch. Serve immediately and enjoy your Easy Chicken Ramen Stir-Fry while it's hot!
