Ingredients

  • 1 pound boneless skinless chicken breasts about 2 full breasts
  • 1 cup breadcrumbs can reduce to ½ cup to lower the carbs
  • 0.5 cup grated parmesan cheese
  • 1 cup pasta sauce any flavor
  • 1 cup shredded mozzarella cheese
  • pasta for serving

Instructions

  • Preheat your oven to 375°F (190°C) to ensure even cooking and a golden brown crust.
  • Place the chicken breasts between two pieces of plastic wrap or parchment paper and use a meat mallet to gently pound to about ½ inch thickness.
  • In a mixing bowl, combine the breadcrumbs and grated parmesan cheese, mixing well until evenly incorporated.
  • Coat each chicken breast in the breadcrumb mixture, pressing down lightly to ensure it adheres. Place in a baking dish lightly sprayed with cooking spray or brushed with olive oil.
  • Bake the breaded chicken in the preheated oven for about 25 minutes, or until cooked through and golden brown.
  • Remove chicken from oven and spoon pasta sauce evenly over each piece. Sprinkle shredded mozzarella cheese on top.
  • Return dish to oven and broil for 2-4 minutes, or until mozzarella is bubbly and lightly browned. Watch closely to avoid burning.
  • Cook your choice of pasta according to package instructions. Serve the chicken parmesan over the pasta and enjoy!
