Ingredients

Filling

  • 3 cups shredded cooked chicken rotisserie chicken
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • 4 ounce diced green chiles 1 can
  • 1 teaspoon chili seasoning
  • Kosher salt to taste
  • ground black pepper to taste

To Roll and Fry

  • 12 inch flour or corn tortillas soft and pliable
  • vegetable or canola oil for frying

Instructions

Prepare the Filling

  • In a large bowl, combine the shredded rotisserie chicken, shredded Monterey Jack cheese, salsa, sour cream, diced green chiles, chili seasoning, salt, and pepper. Mix everything thoroughly until well combined.

Warm the Tortillas

  • Warm tortillas slightly in a dry skillet or microwave for 20-30 seconds to make them pliable and less likely to crack when rolled.

Assemble the Flautas

  • Spoon about 2-3 tablespoons of the chicken mixture along one side of each tortilla. Roll the tortilla tightly around the filling with the seam underneath.

Heat the Oil

  • Pour vegetable or canola oil into a large skillet to a depth of about 1/2 inch. Heat over medium-high heat until shimmering but not smoking (about 350°F).

Fry the Flautas

  • Carefully place the rolled flautas seam-side down into the hot oil. Fry in batches for 2-3 minutes on each side or until golden brown and crispy. Use tongs to turn and remove them when done.

Drain and Serve

  • Transfer the fried flautas to a plate lined with paper towels to absorb excess oil. Serve hot with extra salsa and sour cream for dipping.

Equipment

  • Large Mixing Bowl
  • Frying pan
  • Deep skillet
  • Tongs
  • Paper Towels
  • Measuring Cups and Spoons

Notes

  • Store leftover flautas in an airtight container in the refrigerator for up to 3 days and reheat in the oven for crispiness.
  • For a healthier option, bake flautas at 425°F for 15-20 minutes, flipping halfway through.
  • Warm tortillas before rolling to prevent cracking and ensure easy rolling.
  • Customize the filling by adding black beans, corn, or substituting cheeses like mozzarella or pepper jack.
  • Do not overcrowd the pan when frying to maintain oil temperature and crispiness.
