Ingredients

  • 1 pound lean ground beef
  • 2 tablespoons taco seasoning mix
  • 1/2 cup water
  • 4 cups chopped romaine lettuce
  • 1 medium tomato diced
  • 3/4 cup shredded cheddar cheese
  • 1 1/2 cups nacho cheese-flavored tortilla chips slightly crushed (such as Doritos)
  • 1/2 cup light salad dressing pick your favorite

Instructions

  • Heat your skillet over medium heat. Add the lean ground beef, breaking it apart with a spatula. Cook until it’s browned and no longer pink, about 6-8 minutes. Drain any excess fat if needed to keep it light.
  • Sprinkle the taco seasoning mix over the cooked beef. Pour in the 1/2 cup water and stir well to combine. Let it simmer for 3-4 minutes until the water reduces slightly and the beef is coated in a flavorful taco sauce. Remove from heat and set aside.
  • While the beef is cooking, chop the romaine lettuce into bite-sized pieces and dice the tomato. Place them in your mixing bowl along with the shredded cheddar cheese.
  • Add the slightly crushed nacho cheese-flavored tortilla chips to the bowl. These provide the signature crunch and cheesy flavor that make this salad irresistible.
  • Add the warm seasoned beef on top of the salad ingredients. Drizzle with your preferred light salad dressing. Toss gently to combine everything without breaking up the chips too much.
