Ingredients

  • 1.5 cups hot water
  • 1.5 cups masa harina finely ground corn flour
  • 1 tsp salt for crust and filling
  • 0.5 tsp garlic powder for crust
  • 0.5 tsp ground cumin for crust
  • 1 tbsp olive oil for crust
  • 1 pound ground beef or ground turkey protein base
  • 1 tsp granulated onion powder for meat seasoning
  • 0.5 tsp garlic powder for meat seasoning
  • 1 tsp cumin for meat seasoning
  • 1 tsp chili powder for meat seasoning
  • 0.5 tsp salt for meat seasoning
  • 0.25 tsp pepper for meat seasoning
  • 0.5 tsp cornstarch to thicken filling
  • 1 15.5 ounce can pinto or black beans drained
  • 1 10 ounce can diced tomatoes with green chilies undrained
  • 1 cup shredded cheddar or Mexican blend cheese for topping

Instructions

  • In a mixing bowl, combine masa harina, salt, garlic powder, and ground cumin. Slowly add hot water while stirring until a soft dough forms. Stir in olive oil and knead gently until smooth. Set aside.
  • Heat a skillet over medium heat. Add ground beef or turkey, breaking it apart with a spatula. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.
  • Add granulated onion powder, garlic powder, cumin, chili powder, salt, and pepper to the meat. Stir well. Sprinkle cornstarch over meat and stir in. Add drained beans and canned diced tomatoes with green chilies. Cook 3-4 minutes until thickened.
  • Preheat oven to 375°F (190°C). Press two-thirds of masa dough evenly into bottom and sides of pie dish to form crust. Spoon meat and bean filling evenly over crust. Crumble or press remaining masa dough over filling to create top crust.
  • Bake pie for 25 minutes or until crust is firm and slightly golden. Remove from oven, sprinkle shredded cheese evenly over top, and return to oven. Bake 5-7 minutes until cheese melts and bubbles.
  • Let pie cool for 5 minutes before slicing. Serve with favorite taco toppings like sour cream, cilantro, avocado, or salsa.

Equipment

  • Mixing Bowl
  • 9-inch pie dish or round baking dish
  • Skillet
  • Spatula or Wooden Spoon
  • Measuring Cups and Spoons
  • Cheese grater

Notes

  • Drain beans well to avoid watery filling and maintain perfect pie texture.
  • Do not overwork masa dough; it should be soft but not sticky or crumbly.
  • Let the pie rest after baking to set and slice cleanly.
  • Swap proteins or beans for vegetarian or dietary preferences.
  • Freeze unbaked pie wrapped tightly for up to 2 months; thaw before baking.
