Ingredients

Dressing

  • 1/4 cup Toasted Sesame Oil cold-pressed preferred
  • 2 tablespoons Honey
  • 2 tablespoons Orange or Apricot Jam
  • 1/3 cup Freshly Squeezed Orange Juice
  • 1 tablespoon Orange Zest
  • 3 tablespoons Rice Vinegar
  • 2 teaspoons Fresh Ginger grated
  • 1-2 cloves Garlic grated
  • 1/2 teaspoon Ground Turmeric

Salad Ingredients

  • 2 tablespoons Sesame Seeds toasted
  • 4 cups Shredded Cabbage and Kale mixed
  • 2 cups Cooked Shredded Rotisserie Chicken plain, unsalted
  • 1 cup Chopped Cilantro or Thai Basil fresh
  • 2 Jalapeños seeded if desired, chopped
  • 2 Avocados sliced
  • 1/3 cup Roasted Salted Cashews chopped
  • 1/3 cup Chopped Green Onions
  • 2 cups Crispy Wontons store-bought or homemade

Instructions

Dressing Preparation

  • In a medium bowl, whisk together 1/4 cup toasted sesame oil, 2 tablespoons honey, 2 tablespoons orange or apricot jam, 1/3 cup freshly squeezed orange juice, 1 tablespoon orange zest, 3 tablespoons rice vinegar, 2 teaspoons freshly grated ginger, 1-2 cloves grated garlic, and 1/2 teaspoon ground turmeric until smooth and honey and jam dissolve.

Toasting Sesame Seeds

  • In a small dry skillet over medium heat, toast 2 tablespoons sesame seeds until golden and fragrant, about 2-3 minutes, stirring frequently to avoid burning. Remove from heat and set aside.

Salad Assembly

  • In a large mixing bowl, combine 4 cups shredded cabbage and kale, 1 cup chopped cilantro or Thai basil, 2 chopped jalapeños (seeded if desired), 1/3 cup chopped green onions, and 1/3 cup chopped roasted salted cashews. Toss lightly to combine.
  • Add 2 cups cooked shredded rotisserie chicken to the vegetable mixture, then gently fold in 2 sliced avocados without mashing.
  • Pour dressing over salad ingredients and toss gently to coat evenly. Adjust seasoning with salt or more vinegar if desired.
  • Just before serving, sprinkle toasted sesame seeds and 2 cups crispy wontons over the top. Serve immediately to enjoy full crunch.
