Ingredients

  • 340 g SPAM Chopped Pork and Ham diced into small cubes
  • 1 cup all-purpose flour for the batter base
  • 0.5 teaspoon salt to season the batter
  • 1 teaspoon baking powder helps create a light, airy texture
  • 0.25 teaspoon ground black pepper adds a touch of mild heat
  • 1 cup beer preferably a light lager or pilsner for crispiness
  • Oil for frying a neutral oil with a high smoke point like vegetable or canola oil

Instructions

  • Open your can of SPAM Chopped Pork and Ham and dice it into small, bite-sized cubes. Set aside.
  • In a large mixing bowl, combine the all-purpose flour, salt, baking powder, and ground black pepper. Whisk together thoroughly to evenly distribute the seasoning.
  • Slowly pour in the beer while whisking the dry ingredients to form a smooth batter. The batter should be thick enough to coat the SPAM pieces but still slightly runny.
  • Gently fold the diced SPAM into the batter, making sure every piece is evenly coated. Avoid overmixing.
  • Pour enough oil into a deep frying pan or pot to submerge your fritters halfway (about 1 to 2 inches deep). Heat the oil over medium-high heat until it reaches 350°F (175°C). Test by dropping a small amount of batter in; if it sizzles and floats, the oil is ready.
  • Using a spoon or small ice cream scoop, carefully drop spoonfuls of the batter-coated SPAM into the hot oil. Fry in batches, cooking each fritter for about 3-4 minutes, turning occasionally, until golden brown and crispy.
  • Use a slotted spoon to remove the fritters from the oil and place them on paper towels to drain excess oil. Serve immediately with your favorite dipping sauce.

Equipment

  • Large Mixing Bowl
  • Whisk
  • Deep Frying Pan
  • Slotted Spoon
  • Small Ice Cream Scoop

Notes

Ensure oil temperature is around 350°F (175°C) for best frying results. Avoid overmixing batter to keep fritters light. Use light beer for crispness or substitute with sparkling water for a non-alcoholic version. Add optional ingredients like cornmeal for extra crunch or herbs and spices for flavor variations. Leftovers can be refrigerated for 2 days or frozen uncooked; reheat in oven to maintain crispiness.
