Ingredients

  • 5-6 Chicken thighs bone-in, skin-on
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon Smoked paprika
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Avocado oil for searing

Instructions

  • Pat your chicken thighs dry with paper towels to ensure crispy skin.
  • In a small bowl, mix salt, garlic powder, onion powder, Italian seasoning, smoked paprika, and black pepper. Rub the spice blend all over the chicken thighs, including under the skin.
  • Heat the cast iron skillet over medium-high heat and add the avocado oil. Heat until the oil shimmers.
  • Place chicken thighs skin-side down in the skillet without overcrowding. Sear undisturbed for 7-8 minutes until skin is golden brown and crispy.
  • Flip the chicken thighs over, reduce heat to medium, and cook for 15-20 minutes until internal temperature reaches 165°F (75°C).
  • Remove chicken from skillet and let rest for 5 minutes before serving.
