Ingredients

  • 1 pound turkey sausage casing removed
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 2 cups fresh spinach chopped
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 package gnocchi 16 ounces
  • Fresh basil for garnish

Instructions

  • Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions, usually 2-3 minutes or until they float to the surface. Using a slotted spoon, transfer the cooked gnocchi to a colander to drain. Set aside.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the turkey sausage (casing removed) and break it apart with your spoon. Cook until browned and cooked through, about 5-7 minutes. Remove sausage from the pan and set aside, leaving the rendered fat in the skillet.
  • In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add halved cherry tomatoes and cook until they start to soften, about 3-4 minutes.
  • Stir in the chopped spinach and Italian seasoning. Cook until the spinach wilts, about 2 minutes. Season with salt and pepper to taste.
  • Pour in the heavy cream and bring to a gentle simmer. Let the cream reduce slightly for 3-4 minutes, stirring occasionally. Stir in grated Parmesan cheese and continue stirring until the sauce thickens.
  • Return the browned turkey sausage to the skillet. Add the cooked gnocchi and gently toss to coat everything evenly in the creamy sauce. Cook for an additional 2 minutes to allow flavors to meld.
  • Remove from heat, garnish with fresh basil leaves, and serve immediately. This dish pairs wonderfully with a simple side salad or crusty bread.

Equipment

  • Large Skillet
  • Medium Saucepan
  • Wooden spoon or spatula
  • Knife and cutting board
  • Measuring Cups and Spoons
  • Colander

Notes

  • Use a quality turkey sausage brand for the best flavor and juiciness.
  • Don’t overcook the gnocchi; they should be soft but hold their shape to avoid mushiness.
  • For a thicker sauce, simmer the cream a bit longer before adding Parmesan cheese.
  • Fresh basil garnish adds a bright, herbaceous note and should not be skipped.
  • Leftovers store well in the fridge for up to 3 days and can be reheated gently with added cream or milk if needed.
