Ingredients

  • 2 cups Greek yogurt low-fat, plain
  • 2 tablespoons lemon juice
  • 1/2 cup parsley leaves loosely packed
  • 2 cloves garlic
  • 1/2 teaspoon paprika
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 3/4 cup scallions chopped, divided

Instructions

Method: Creamy Scallion and Yogurt Dip

  • Gather your ingredients and prep all items for a smooth process.
  • In a mixing bowl, combine the Greek yogurt and lemon juice. Stir until smooth and creamy.
  • Finely mince the garlic cloves and add them to the yogurt mixture along with the paprika, sea salt, and black pepper. Mix well to combine.
  • Chop the parsley leaves and add them to the dip. Mix thoroughly to blend the herbs into the yogurt base.
  • Take the chopped scallions, reserving a small portion for garnish. Fold the remaining scallions into the dip evenly.
  • Taste the dip and adjust seasoning with more salt, lemon juice, or pepper as desired.
  • Cover the dip and refrigerate for at least 30 minutes to allow flavors to meld. Garnish with reserved scallions before serving.

Equipment

  • Mixing Bowl
  • Measuring Cups and Spoons
  • Food processor or blender
  • Spatula
  • Serving Bowl

Notes

  • Use regular plain yogurt if Greek yogurt is unavailable, but expect a less creamy texture.
  • Lime juice can substitute lemon juice for a different citrus flavor.
  • Fresh dill or cilantro can be used instead of parsley for an herb variation.
  • Store the dip in an airtight container in the refrigerator for up to 3 days; flavors improve after chilling.
  • Avoid freezing as yogurt texture changes; best served cold or at room temperature.
