Ingredients

  • 1 16-ounce package gnocchi (450g)
  • ½ cup sundried tomatoes in oil chopped
  • ¾ cup heavy cream (180ml, double cream in the UK)
  • 4 tablespoons pesto
  • ½ teaspoon salt

Instructions

  • Start by bringing a large pot of salted water to a boil. Once boiling, add the gnocchi. They will cook quickly, usually floating to the surface within 2 to 3 minutes. Once they float, use a slotted spoon to remove them from the water and set aside. Make sure not to overcook to keep them tender but firm.
  • While the gnocchi cooks, chop the sundried tomatoes if they are not pre-chopped. Since they are packed in oil, you'll get a wonderful depth of flavor and some extra richness in the dish.
  • In a large skillet over medium heat, pour in the heavy cream. Allow it to warm gently for a minute or two, then stir in the pesto and salt. Mix well until the sauce is smooth and creamy. Let it simmer for 2-3 minutes to thicken slightly.
  • Add the cooked gnocchi and chopped sundried tomatoes to the skillet with the creamy pesto sauce. Gently toss everything together to coat the gnocchi evenly with the sauce. Cook for an additional 2 minutes to heat through and allow the flavors to meld.
  • Once everything is heated through and coated in the luscious sauce, remove from heat. Serve immediately for the best texture and flavor. You can garnish with fresh basil leaves or a sprinkle of grated Parmesan if you like.

Notes

Use store-bought pesto for convenience or make your own fresh pesto for more vibrant flavor. Be careful not to overcook the gnocchi. Store leftovers in an airtight container in the fridge for up to 2 days and reheat gently with a splash of cream or milk.
