Ingredients

  • 8 ounces orzo pasta small rice-shaped pasta
  • 1 pound shrimp peeled and deveined, fresh or frozen
  • 1 tablespoon olive oil for sautéing
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 bell pepper diced, red or yellow
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup cherry tomatoes halved
  • salt and pepper to taste
  • chopped parsley for garnish

Instructions

  • Heat the olive oil in a large skillet over medium-high heat. Toss the peeled and deveined shrimp with the Cajun seasoning, making sure each piece is well coated. Once the oil is hot, add the shrimp in a single layer and cook for about 2 minutes per side until they turn pink and opaque. Remove the shrimp from the pan and set aside.
  • In the same skillet, add the diced onion and bell pepper. Sauté for 3-4 minutes until the onion becomes translucent and the peppers soften. Add the minced garlic and cook for another 30 seconds until fragrant.
  • Add the orzo pasta to the skillet with the vegetables and stir to combine. Pour in the chicken broth and bring the mixture to a gentle simmer. Cook the orzo uncovered, stirring occasionally, until the liquid is mostly absorbed and the pasta is tender but still has a slight bite, about 8-10 minutes.
  • Reduce the heat to low and stir in the heavy cream. Allow the sauce to thicken slightly, cooking for an additional 3-5 minutes. Add the halved cherry tomatoes and stir gently to warm them through without breaking them apart.
  • Return the cooked shrimp to the skillet, folding them gently into the creamy orzo mixture. Taste and season with salt and pepper as needed. Cook for another minute to ensure everything is heated through and well combined.
  • Sprinkle chopped parsley over the top for a fresh burst of color and flavor. Serve immediately while warm and creamy.
