Ingredients

  • 8 ounces linguine pasta
  • 1 pound shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 bell pepper diced
  • 1 teaspoon Cajun seasoning
  • 0.5 teaspoon paprika
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • salt and pepper to taste
  • 2 tablespoons fresh parsley chopped

Instructions

Step 1: Cook the Linguine

  • Fill a large pot with water, add a generous pinch of salt, and bring to a boil. Add 8 ounces of linguine and cook according to package instructions until al dente—typically about 9-11 minutes. Drain the pasta and set aside, reserving about 1/4 cup of pasta water for later use.

Step 2: Sauté the Shrimp

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the peeled and deveined shrimp seasoned lightly with salt, pepper, 1 teaspoon Cajun seasoning, and 1/2 teaspoon paprika. Cook for about 2 minutes per side or until shrimp turn pink and opaque. Remove shrimp from the skillet and set aside.

Step 3: Cook the Vegetables

  • In the same skillet, add the finely chopped onion and diced bell pepper. Sauté over medium heat until softened, about 5 minutes. Add the minced garlic and cook for another 1 minute until fragrant.

Step 4: Build the Creamy Sauce

  • Pour in 1/2 cup chicken broth and 1 cup heavy cream, stirring to combine. Bring the mixture to a gentle simmer, allowing it to thicken slightly, about 3-5 minutes. Season with additional salt, pepper, and a pinch more Cajun seasoning if desired.

Step 5: Combine and Finish

  • Add the cooked shrimp back into the skillet along with the drained linguine. Toss everything together, adding reserved pasta water a little at a time if the sauce needs loosening. Cook for another 2 minutes to allow flavors to meld.

Step 6: Garnish and Serve

  • Remove from heat and sprinkle with 2 tablespoons chopped fresh parsley. Serve immediately for a comforting, spicy dinner that’s ready in under 30 minutes.

Equipment

  • Large Pot
  • Large skillet or sauté pan
  • Colander
  • Knife and cutting board
  • Wooden spoon or silicone spatula
  • Measuring Cups and Spoons

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 2 days and reheat gently to preserve texture and flavor.
  • Substitute linguine with gluten-free pasta or zucchini noodles for a low-carb option.
  • Swap shrimp with chicken breast strips or tofu for different protein alternatives.
  • Make the sauce thicker by simmering longer or adding grated Parmesan cheese or a cornstarch slurry.
  • Adjust the spice level by modifying the amount of Cajun seasoning or using smoked paprika and chili powder blends.
