Ingredients

  • 12 oz cheese tortellini the star pasta, bringing cheesy goodness in every bite
  • 2 tablespoons olive oil for sautéing and adding a rich base flavor
  • 1 lb chicken breast diced; lean protein that soaks up the Cajun seasoning beautifully
  • 1 tablespoon Cajun seasoning the secret spice blend that gives the dish its signature kick
  • 1 cup heavy cream creates the creamy sauce that coats the tortellini perfectly
  • 1 cup chicken broth adds depth and moisture to the sauce
  • 1 cup bell peppers diced; for a sweet, crunchy contrast
  • 1 cup onion diced; builds a savory flavor base
  • 2 cloves garlic minced; aromatic and flavorful, essential for that extra punch
  • Salt and pepper to taste; to season and balance all the flavors
  • Fresh parsley chopped; a bright garnish that adds freshness and color

Instructions

Preparation

  • Dice chicken breast into bite-sized pieces. Dice bell peppers and onion, and mince garlic cloves.

Cook Chicken

  • Heat olive oil in a skillet over medium-high heat. Toss diced chicken with Cajun seasoning until well coated. Add chicken to hot pan and sauté until golden brown and cooked through, about 6-7 minutes. Remove chicken and set aside.

Cook Vegetables

  • In the same skillet, add more olive oil if needed. Add diced onions and bell peppers, cooking until softened and onions are translucent, about 4-5 minutes. Add minced garlic and sauté for 30 seconds until fragrant.

Make Sauce

  • Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer and cook 3-4 minutes until slightly thickened.

Combine and Finish

  • Add cheese tortellini and cooked chicken to the skillet. Stir gently and cook 3-5 minutes until heated through and sauce reaches desired consistency.
  • Taste and adjust seasoning with salt and pepper. Garnish with fresh chopped parsley before serving.

Equipment

  • Large skillet or sauté pan
  • Sharp Knife
  • Wooden spoon or silicone spatula
  • Measuring Cups and Spoons
  • Colander

Notes

  • Swap chicken for turkey or shrimp for a protein variation.
  • Substitute bell peppers with spinach or kale for a green veggie option.
  • Use coconut cream instead of heavy cream for a dairy-free version.
  • Try whole wheat or gluten-free tortellini to suit dietary needs.
  • Store leftovers refrigerated up to 3 days, or freeze for up to 2 months.
