Ingredients

  • 4 cups corn kernels (frozen, fresh, or canned and drained)
  • 1 small onion finely diced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 0.5 cup heavy cream
  • 0.75 cup milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 sprigs fresh thyme

Instructions

  • Start by measuring out your corn kernels. If you are using fresh corn, cut the kernels off the cob. Frozen corn should be thawed, and canned corn must be drained thoroughly. Finely dice the small onion.
  • In a medium saucepan over medium heat, melt the butter until it’s foamy. Add the diced onion and sauté until translucent and fragrant, about 3-4 minutes.
  • Sprinkle the flour over the sautéed onions and stir well to combine. Cook the flour with the butter and onion mixture for about 1-2 minutes, stirring constantly.
  • Slowly pour in the milk and heavy cream while whisking continuously to prevent lumps. Bring the mixture to a gentle simmer and cook until it thickens slightly, about 3-5 minutes.
  • Stir in the corn kernels along with the salt, pepper, and fresh thyme sprigs. Reduce the heat to low and let the mixture cook gently for another 5-7 minutes, stirring occasionally.
  • Remove the thyme sprigs before serving. Taste and adjust seasoning if needed. Serve warm.

Notes

Use fresh corn for best flavor, or frozen corn if necessary. To achieve an extra smooth sauce, blend half of the corn mixture before combining. Fresh thyme adds a delicate herbal note but can be substituted with dried thyme. For a richer flavor, swap milk with half-and-half or all heavy cream. Keep stirring gently while simmering to avoid burning. Variations include adding cayenne pepper for spice, cheese for richness, or making it vegan by substituting dairy ingredients.
