  • 4 croissants halved

Instructions

  • Begin by shredding your cooked chicken into bite-sized pieces. Remove skin and bones if using rotisserie chicken. Chop fresh cranberries finely. Dice the apple into small cubes, leaving skin on. Chop celery and walnuts into similar-sized pieces.
  • In a medium bowl, combine mayonnaise and Dijon mustard. Stir well until fully blended.
  • Add shredded chicken, chopped cranberries, diced apple, celery, and walnuts to the bowl with dressing. Season with salt and pepper to taste. Gently fold together with a spatula, keeping components distinct.
  • Slice each croissant in half horizontally. For warm croissants, place cut side up on a baking sheet and toast in a preheated oven at 350°F (175°C) for 5 minutes.
  • Spoon a generous amount of the cranberry apple chicken salad onto the bottom half of each croissant. Top with the other half and press down gently. Serve immediately.
