Ingredients

  • 3 cans corn 14.5 oz cans, drained well
  • 1/4 cup unsalted butter
  • 1/2 cup mayonnaise recommended Hellmann's
  • 8 oz shredded cheese recommended mild cheddar
  • black pepper a dash

Instructions

  • Preheat your oven to 350°F (175°C). A hot oven is essential for achieving that perfectly melted cheese.
  • Open the cans of corn and drain them well to remove excess liquid. This will help prevent the dish from becoming watery.
  • In a mixing bowl, combine the drained corn, softened butter, mayonnaise, and shredded cheese. Stir everything together until well combined. Add a dash of black pepper for flavor.
  • Pour the corn mixture into an oven-safe baking dish, spreading it out evenly.
  • Bake in the preheated oven for about 20-25 minutes or until the top is golden and bubbly. The cheese should be melted and slightly browned.
  • Remove the dish from the oven and let it cool for a few minutes. Serve warm with tortilla chips, bread, or fresh veggies for dipping.

Equipment

  • Mixing Bowl
  • Spatula
  • Oven-Safe Baking Dish
  • Measuring Cups and Spoons

Notes

  • Ensure the corn is thoroughly drained to avoid a watery mixture.
  • Keep an eye on the baking to prevent the cheese from burning.
  • You can assemble in advance and refrigerate; add a few extra minutes to baking time if baking cold.
  • Try swapping mild cheddar for pepper jack cheese for a spicy twist.
  • Store leftovers in an airtight container in the fridge for up to 3 days and reheat before serving.
