Ingredients

  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 16 ounces medium salsa
  • 9.75 ounces Cool Ranch Doritos
  • 3 1/2 cups shredded Mexican blend cheese
  • 8 ounces cream cheese
  • 1/4 cup chopped scallions

Instructions

  • In a large skillet over medium heat, add the lean ground beef. Cook until browned, breaking it apart with a spatula as it cooks, about 7-10 minutes.
  • Drain any excess fat if necessary. Sprinkle the taco seasoning over the beef and stir to combine. Add half of the salsa and mix well. Let it simmer for a couple of minutes.
  • In a mixing bowl, add the cream cheese and the remaining salsa. Use a spatula to mix until smooth and creamy.
  • Preheat oven to 350°F (175°C). In a 9x13 inch baking dish, layer half of the Cool Ranch Doritos on the bottom. Spread half of the beef mixture over the chips, then half of the creamy salsa mixture. Sprinkle with 1 1/2 cups shredded cheese. Repeat layers with remaining ingredients.
  • Top the casserole with the remaining 1 1/2 cups shredded cheese and a few extra crushed Doritos.
  • Bake in the preheated oven for 25-30 minutes, or until cheese is melted and bubbly and edges are slightly golden.
  • Remove from oven and let cool for a few minutes. Garnish with chopped scallions. Serve warm and enjoy!
