Instructions

  • Begin by measuring out all your ingredients. Having everything ready ensures a smooth process and prevents the chocolate from setting too quickly.
  • In a medium microwave-safe bowl, combine the unsalted butter, semi-sweet chocolate chips, and smooth peanut butter. Microwave in 30-second intervals, stirring well after each, until the mixture is completely melted and smooth. This usually takes about 1 to 1.5 minutes total. Stir in the pure vanilla extract until evenly combined.
  • Place the Rice Chex cereal in a large mixing bowl. Pour the melted chocolate and peanut butter mixture over the cereal. Gently stir with a spatula or wooden spoon until every piece of cereal is coated evenly. Be careful to stir gently to avoid breaking the cereal.
  • Transfer the coated cereal into a large resealable plastic bag or a large container with a lid. Add the powdered sugar, seal the bag or container, and shake vigorously until all the cereal pieces are well coated with the powdered sugar.
